Guinea fowl strips/Cream/Egg yolk/Sherry vinegar/Parmesan/Cantabrian anchovies/Fleur de sel/Pepper/Lettuce
Method
- Mix together the cream, egg yolk, vinegar, salt and pepper
- Pan-fry the guinea fowl strips
- Cook until lightly browned
- Add the prepared sauce, parmesan and anchovies
