Ingredients

Guinea fowl strips/Cream/Egg yolk/Sherry vinegar/Parmesan/Cantabrian anchovies/Fleur de sel/Pepper/Lettuce

Method

  1.  Mix together the cream, egg yolk, vinegar, salt and pepper
  2. Pan-fry the guinea fowl strips
  3. Cook until lightly browned
  4. Add the prepared sauce, parmesan and anchovies
