Guinea fowl breast en papillote

Guinea fowl breast en papillote

Ingredients

  • Baking parchment
  • 1 Guinea fowl breast
  • Salt & pepper
  • 100g Carrots
  • 100g Potatoes
  • 40g Wild garlic
  • 4 Cherry tomatoes
  • 10g Pine nuts
  • 20g Butter

Method

  1. Boil the potatoes and carrots in salted water for 5 minutes.
  2. Add the wild garlic and steam for 1 minute.
  3. Add the pine nuts, season with salt and pepper, then place it all on a sheet of baking parchment.
  4. Season the guinea fowl breast with salt, pepper and rosemary and add to the cooked vegetables.
  5. Spread the butter on the guinea fowl and lay the tomatoes on top.
  6. Brush the edges with egg and wrap the whole thing up like a parcel.
  7. Bake in the oven at 180°C for 15 minutes and serve with the parcel still wrapped
