Guinea fowl breast en papillote

Ingredients
- Baking parchment
- 1 Guinea fowl breast
- Salt & pepper
- 100g Carrots
- 100g Potatoes
- 40g Wild garlic
- 4 Cherry tomatoes
- 10g Pine nuts
- 20g Butter
Method
- Boil the potatoes and carrots in salted water for 5 minutes.
- Add the wild garlic and steam for 1 minute.
- Add the pine nuts, season with salt and pepper, then place it all on a sheet of baking parchment.
- Season the guinea fowl breast with salt, pepper and rosemary and add to the cooked vegetables.
- Spread the butter on the guinea fowl and lay the tomatoes on top.
- Brush the edges with egg and wrap the whole thing up like a parcel.
- Bake in the oven at 180°C for 15 minutes and serve with the parcel still wrapped
