Ingredients

1 guinea fowl • 4 carrots • 600g potatoes • 100g onions • sweet potato • 1 tbsp olive oil • 1 tbsp herbes de Provence • 20g butter • 100g onion • 100ml Red Pineau des Charentes

Method

  1. Prepare the guinea fowl. Remove the small feathers from around the breast/leg joint and burn off any that are left.
  2. Tip: use a lighter, it’s quicker and does a better job.
  3. Peel and wash the vegetables. Chop the sweet potatoes into large chips, cut the carrots in two pieces then cut each piece in two. Add the oil, salt, pepper and herbes de Provence and mix together (with your hands is best).
  4. Peel and finely chop the onion.
  5. Pre-heat the oven to 200°C.
  6. Grease a casserole dish with 20g butter. Put it on the heat and fry the chopped onion for two or three minutes. Add the guinea fowl and seasoned vegetables and brush the meat with the rest of the olive oil. Rub lightly with your hands. Sprinkle over the Pineau des Charentes, cover and place in the oven.

Cook for 1 hour 15 minutes. Taste.
