Cajun guinea fowl wings by chef Corentin Rochez

Ingredients
- Guinea fowl wings
- Corn cob
- Butter
- Homemade ketchup
- Oregano
- Basil
- Paprika
- Cumin
- Chilli
- Salt & pepper.
Method
- Make a cajun spice mix with the oregano, basil, paprika, cumin, chilli, salt and pepper.
- Cut the corn cob into 4cm lengths. Cut the wings into two pieces at the joint and keep the top two sections.
- Marinade the wing pieces in a blend of home-made ketchup and cajun spices.
- Melt the butter with some cajun spice mix and brush it on the corn.
- Cook the corn in the oven or on the barbecue.
- Cook the wings in the oven at 180°C for a few minutes.
- Serve.
